Fluffy Buttermilk Pancakes Recipe

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 2 cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

Step 1: Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Step 2: Prepare the Wet Ingredients

In a separate bowl, beat the eggs, then add buttermilk, melted butter, and vanilla extract. Whisk everything together until smooth.

Step 3: Combine Wet and Dry Mixtures

Slowly pour the wet ingredients into the dry ingredients. Stir gently until just combined—be careful not to overmix. A few lumps in the batter are fine!

Step 4: Heat the Cooking Surface

Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or oil.

Step 5: Cook the Pancakes

  • Pour about ¼ cup of batter onto the heated skillet for each pancake.
  • Cook until small bubbles form on the surface, about 2 minutes.
  • Flip and cook for another 1-2 minutes, or until golden brown.

Step 6: Serve and Enjoy

Stack the pancakes and serve them warm with butter, maple syrup, fresh fruit, or your favorite toppings.


Tips for Perfect Pancakes

Make Them Extra Fluffy

Let the batter sit for 5 minutes before cooking to allow the ingredients to activate, creating fluffier pancakes.

Buttermilk Substitute

If you don’t have buttermilk, you can make a quick substitute by mixing 2 cups of milk with 1 tablespoon of vinegar or lemon juice. Let it sit for 5 minutes before using.

Add More Flavor

For a twist, mix in chocolate chips, blueberries, or a dash of cinnamon to the batter before cooking
